Red currant juice

Most fresh currants are use in jams, jellies and preserves, and also for their juice. Red currants can be eaten raw, either directly or in salads, but because of their tartness they are usually cooked.

Although red currant juice is extensively use for making jelly and is use in a limited way for punches and other mixed fruit beverages, its use for beverage purposes is not for great importance.

Redcurrants are high in vitamin C, and minerals. This makes their juice valuable in clearing hemorrhoids. They also have a small amount of the fatty acid GLA (gamma linoleic acid), which produce prostaglandin an anti-inflammatory hormone that control body pain.

Red currant juice varies in acidity from 1,9 to about 2.9%. Juice of such high acidity is not suitable for use as a beverage without dilution with a sugar solution.
